- 明治以前の古い釘や鎖などの鉄を製錬、鍛え上げた鋼材を刃物の地金に使用することで波のような独特な波紋が浮かび上がることから波鉄（なみてつ）と呼ばれておりますが、当社では鍛鉄（きたえてつ）と称しております。仕上げは、焼きを入れた地肌を研磨せずそのままにしており、叩いた跡がそのまま残った無骨さに趣のある包丁です。また、炭素量が少ないため研ぎやすく、頑丈、磨き上げに比べさび難いという利点もあります。
- The steel material is smelted and forged from pre-Meiji steel nails and
chains, and is used as the base metal of the blade. It is called "
Nami Tetsu " because of the unique ripples that appear on the surface.
It is called " Tan tetsu " ( Kitae-Tetsu ). The finish is rugged,
with the mark of beating remaining as it is, as the ground surface with
hardening is left unpolished. These knives have an elegant appearance to
them. It also has the advantage of being easier to sharpen due to its low
carbon content, being sturdier and less prone to rust than polished knives.

Self-measured average hardness (HRC): 60 or higher
There will be a 30% increase for double-blade use and a 20% increase for left-handed use.
Changing the handle to black or octagonal (ebony) will cost an additional ¥9,000.
Chestnut-shaped (ebony or magnolia) hilt changes and special orders for black pods (ebony) and white pods (magnolia) are available on request.
