Do you know "soot bamboo"?
When an old house of 150 to 300 years old is dismantled, the bamboos used for the lower side of the thatched roof come out. These are smoky bamboos. They have existed with the life of the people who live there since before the Meiji era, but it is difficult to obtain soot bamboo newly.
Soot bamboo, which was smoked by the smoke of the hearth, is very hard, and even if it is not painted, it is hard to get stains and dirt, and hard to be deformed.
More and more people have been using it for many years now.
The ease of use is great for noodles, fish, beans and slippery foods.
